The Traditional Balsamic Vinegar of Modena DOP comes from the processing of cooked grape must, left to mature through a slow acetification triggered by a natural fermentation and a gradual concentration obtained thanks to a long period of aging. This precious liquid ages in small barrels, built with different types of wood to acquire a wide complexity of characteristics and aromas. Upon completion of twelve years of aging, the “Traditional” is born, a real work of culinary art.
